Tierras de Tavara Premium is a high quality extra virgin olive oil extracted from the Picual variety olives; Its olive oil flavor is characterized by an intense aroma and fruity green-olive taste, freshly cut grass, with nuances of apple, tomato and artichoke. Its refined savor is balanced by a soft bitterness with a slightly spicy aftertaste. This fragrant flavor is obtained from the first olive harvest collected in the month of November (Early harvest).
This high quality extra virgin olive oil is produced in the geographical area of the Designation of Origin Sierra de Segura is located in the north-east of Andalucía, in the mountains of the Sierra de Segura, inside the province of Jaén, which gives the olive oils their genuine characteristics. The majority of the olive groves, mixed with pine forests, are located in the Nature Reserve of Segura, Cazorla y las Villas. It is a precipitous area with an average altitude of 899 meters and very steep slopes, such us the 520 meters of the Guadalimar river and the 1,809 meters of the peak El Yelmo.
The Designation of Origin “Sierra de Segura” (Jaén, Spain) has a historic olive grove where more than the 80 per cent of the olive trees are between 75 and 100 years old. These olive groves are almost of Picual variety. The characteristics of these spanish extra virgin olive oils come from the environment in which they are produced: high mountain olive groves mixed with pine woods. Extra Virgin Olive Oil which colour is yellow-greenish and the aromas prevailing are fruity (apple and tomato, preferably) and fresh grass aromas which are combined with the typical bitter and pungent flavour of the Picual variety.
Olive oils qualified by the Regulatory Council of the DO Sierra de Segura are extreme quality oils. They are extra virgin olive oils with low acidity.
