The harvesting time starts on first week of november therefore giving a lighter fruity flavour with slight touches of tomato and ripe olive and with the common denominator of being a good olive oil with a smooth, balanced flavour, suitable for use both in cooking: frying, for sautés, as an ingredient in traditional cooking, and raw.
